Herb First Veggie Taco Ingredients:
1 cup onion (finely diced)
1 cup carrot (grated)
3 large mushrooms (finely diced)
1 leek (finely diced)
2 celery stalks (finely diced)
1 can black beans
¼ cup frozen corn
1 cup shredded cheese (sharp cheddar or cotija)
1 tbsp avocado oil or tallow
2 cloves fresh garlic
¼ tsp pink himalayan salt
¼ tsp fresh ground black pepper
2 tsp Taco Spice Blend
¼ cup broth
Directions:
Heat oil and spices in pan with oil until fragrant
Add onion, mushrooms, leek, carrot & celery
Deglaze the pan with hot broth
Add fresh garlic and cook until fragrant
Add black beans and frozen corn and cook until heated through
Serve on warm taco shell and top with fresh veggies, sour cream & salsa and cheese
